KOKOY sits in Sector 144 — a business-park catchment, which is a specific kind of problem. The weekday daytime crowd is captive, price-aware and in a hurry. The evening and weekend crowd is discretionary, will travel, and is choosing you over everywhere else in Noida.

One room, 100 covers, two entirely different customers. That tension shaped everything: the menu structure, the kitchen layout, the service model and the seating plan.

Why a business-park cafe is harder than it looks

A business-park cafe has three distinct trading periods, and most of them fail at one.

Morning is coffee and quick breakfast — high throughput, low ticket, and a customer who will not wait.

Lunch is the peak, and it is a compressed window. A large share of the catchment eats within the same ninety minutes. The limit here is not seat count, it is kitchen throughput: how many covers the line can actually push in that window.

Evening and weekend is where the money is. Leisure diners, longer stays, higher spend per head, and a completely different service standard.
