Sumosh in Sonipat is a 25,000 sq ft nightclub and dining venue — the largest nightclub in Delhi NCR — and it took 12 months to build.

We ran the full scope: market research, concept, brand, kitchen and bar engineering, procurement, menu, recruitment, launch, and the monthly operating work that has continued since.

Why a nightclub takes 12 months and a food court takes 22 weeks

We opened a 14,000 sq ft food court with ten brands in Gurgaon in 22 weeks. Sumosh is 25,000 sq ft and took 12 months. If you are budgeting a large venue, understanding why is the single most useful thing on this page.

A food court is a repeatable problem solved ten times. The units are broadly similar, the equipment is broadly similar, and once the first unit is resolved the rest follow a pattern. It parallelises well.

A nightclub does not. It is one enormous room that has to work as several different venues across a single night — dining early, high-energy late — and every system in it is bespoke to that room. Nothing repeats. Nothing parallelises. The bar, the kitchen, the service flow and the guest journey all have to be solved once, at scale, for a space that changes character as the night goes on.

At 25,000 sq ft that is not a bigger version of a restaurant project. It is a different category of build, and a 12-month runway is the honest number. Anyone quoting you four months for a venue this size has not done one.

The practical consequence for an operator: your working capital plan needs to carry 12 months of pre-revenue cost, not four. That is the number that sinks large venue projects — not construction cost.

Phase 1 — Comprehensive market research

Before anything was designed, we ran comprehensive market research. Sonipat is not Gurgaon: the catchment, the price sensitivity and the competing options behave differently, and a 25,000 sq ft nightclub is a large bet to place on assumptions.

The research set the positioning and the capacity plan. Design followed the findings.

Phase 2 — Concept and brand

We developed the concept, then built the brand around it — brand identity development and brand design language, so the venue reads consistently from the signage to the menu to the social feed.

For a nightclub the brand is doing more work than it does for a restaurant. People choose a restaurant for the food; they choose a nightclub for who they will be seen in. The identity has to carry that.

Phase 3 — Design, kitchen and bar

  • Interior design collaboration — working alongside the interior designer so operational and commercial requirements were built into the drawings, not retrofitted after handover
  • Full kitchen layout design and optimisation
  • Bar layout design — built around the late-night peak, not just the dining service
  • Kitchen equipment procurement support
  • Crockery, cutlery and glassware procurement

In a venue this size the back of house has to cope with a demand curve most kitchens never see: a long slow dining service followed by a short, brutal late-night peak. A layout built only for the dining covers will fail at 11pm. One built only for the peak wastes space and labour all evening. That balance is the whole job.

Glassware is not a detail at this scale either. Volume, breakage rates and turnaround at peak all drive the spec, and getting it wrong is a recurring monthly cost rather than a one-off mistake.

Phase 4 — Menu and food

Recipe standardisation carries extra weight in a late-night venue. Consistency at 9pm with a full brigade is straightforward. Consistency at 1am, at volume, with a tired team, is only achievable if every item is built to a documented spec. That is what standardisation buys you.

Phase 5 — We hired the entire team

Front of house and kitchen, every position, full recruitment rather than a shortlist.

Nightclub staffing is its own discipline. The service model, the pace and the guest management are closer to event operations than restaurant service, and the team has to be built for that from the start.

For a venue whose product is partly the crowd itself, the launch is not marketing support — it is the product. A quiet opening night is a real commercial problem, not just a disappointing one, and the campaign has to be built to prevent it.

A nightclub lives or dies on its content cadence. The venue has to look busy, current and worth the drive, every week, indefinitely — which is an ongoing production commitment, not a launch campaign that ends.

The bar is the commercial engine of a venue like this, so the bar layout was designed around the late-night peak rather than the dining service, and we developed the bar menu and cocktail list alongside the food menu.

Scope note: two things on this project sat outside our remit. Licensing was handled directly by ownership. Sound and lighting was delivered by a specialist agency the owner appointed — we sat in every one of those meetings to make sure the design worked with the room, the service flow and the guest journey, but we did not deliver it. On Gilded Yard we did handle sound and lighting ourselves.

Sumosh is the largest single venue we have taken from research to opening and then run afterwards. 25,000 sq ft, 12 months, full scope, and still on a monthly retainer.
